All-Clad Copper Core

All-Clad's newest addition to their line of premium cookware is this line offering a unique synthesis of copper, aluminum, and stainless steel - each layered in where they will do the most good. Both the interior and exterior surfaces are made of 18/10 stainless steel, beneath this is layer of highly conductive aluminum and sandwich in the center is the core of copper. The stainless exterior provides a durable, non-reactive, easy to clean surface while beneath beats the heart of an angel. The copper inside aluminum is the best of both worlds - it is easy to maintain while heating quickly and evenly. You can mix and match pieces from the Copper Core line with either the Stainless collection, Cop-R-Chef, or other copper pans.

Fry Pans

One of the most used pieces in the kitchen, the Fry Pan is available in a variety of sizes. It can be used to sautee as well as fry and offers sloped sides for stirring, turning, whisking, or spooning hot foods - and keeping them in the pan.

Sauce Pans

The sauce pan may be used more than any other piece in the kitchen. It can be used for everything from soup to, well, nuts. You can boil or bake, sautee or steam in a sauce pan (we offer other pieces to do these things, but somehow the sauce pan is always there when you need it.).

Saute Pans

Sauté pans are known for their wide, flat bottoms and their relatively short, straight sides. As the name suggests they are used for sauteeing, but are also great for browning and simmering. Larger sizes have loop handles.

Stockpots

Remember when Clemenza made sauce for 30 in The Godfather? He made it in a stockpot. Stockpots are large, straightsided pots that are perfect boiling or simmering large quantities of, well, anything.

Sauciers

Sauciers have rounded sides and a wide rim. They are made specifically for stirring and whisking - whether creams for a sauce, eggs for a cake, or oils the saucier is the right tool for the job.

Casseroles

Derived the Provencal word "cassa" for dripping pan, the casserole is a round, deep pan often used for baking and sometimes for broiling. The casserole is a versatile pan that often goes straight from oven to table. (If you do this, don't forget the trivets!)

Dutch Oven

Originally made for slow-cooking over an open fire the Dutch Oven has come a long way. It is now a large, thoroughly modern pan with a tight fitting top that is still used for slow-cooked foods.

Braiser Pans

The Braiser Pan is not unlike the casserole but not as large or deep. It is round with sloping sides and is ideal for simmering and browning.
